Fresh Small Translucent Icefish Whitebait

Very small, slender fish with a translucent, glassy-white body, faint golden-brown markings along the spine and a pair of tiny dark eyes. They are whole, heads on, and are shown raw — fanned out on a speckled ceramic plate, and heaped on a white plate beside a kitchen sink.

They are delicate and cook in under a minute: dust them in flour and fry them crisp, drop them into a soup, or fold them through an omelette. They need no gutting or scaling.
