Fresh Large Striped Tiger Prawns

Large whole prawns with heads and shells on, raw: the body is ringed in bold dark brown and cream bands, and the fan tail carries a blue and yellow flash. They are shown on stainless steel worktops with lemon slices, green herbs, coarse salt and peppercorns alongside.

The meat is firm and sweet, and the heads and shells are worth keeping for a quick stock. Grill, steam or poach them briefly, or peel and stir-fry.

Keep frozen at -18°C or below. Thaw in the refrigerator and cook thoroughly before eating.
